While the Canary Islands & Balearics are long-standing holiday destinations for us Brits, their food is still a relative mystery. In this class Rachel will shed some light on the influences and traditions of the islands’ cuisines with some simple but fabulous dishes. Recipes include Papas Arrugadas con Mojo (salt-baked potatoes with spicy green sauce) and Almogrote (a cheese & paprika dip) from The Canary Islands, Tumbet (a ratatouille-style vegetable stew), Escaldums de Pollo (chicken with almond sauce) and Coca de Recapte (a cheese-free summer vegetable flatbread) from Mallorca, and Canarian Banana Fritters to round off the meal.
